Some nice photo spots in Canyonlands National Parks are:
Sunrise:
Meas Arch
White Rim Overlook (less than half mile hike)

Sunset:
Grand View Point Overlook - be sure to hike along and check out both sides on the trail.
Green River Overlook - be sure to explore this area. There is a small hill at right, which offers better views and more foreground objects.
Murphy Point - this 1.8 mile one-way hike, in my opinion, offers one of the best views in the park. Give yourself enough time to explore around at the end of the trail.
